The Cookery, the Southeast’s only revolving pop-up restaurant, announces Hakanai!
Hakanai, a Japanese-inspired eatery, is the brainchild of Billy and Kelli Cotter, owners of the popular local paninoteca, Toast, and Nick and Rochelle Johnson, owners of The Cookery. Hakanai welcomes guests out of the cold winter and into dishes that elicit traditional Japanese flavors, but go beyond conventional elements. Chef Billy Cotter‘s menu features handmade soba noodles, steaming bowls of dashi, and even a bonito made in-house, which requires brining, smoking, and baking fish in order to utilize it in a finely shaved and particularly flavorful form.
Hakanai takes diners on an adventure using daring ingredients and surprising techniques that challenge guests to explore a new world of flavor combinations. This is an opportunity for both chef and guests to throw caution out the window!
The Cookery’s bar will offer libations tailored to Hakanai’s menu, including original cocktails created by local mixologist Scott Richie, an exceptional wine list curated by Wine Authorities and The Clever Vine, and even a Bull City Burger and Brewery beer that was specifically brewed to accompany Chef Cotter’s menu.
Hakanai, defined as “ephemeral” in Japanese, is a temporary restaurant. This pop-up will only be open for dinner from February 1st through 3rd, and then will cease to exist.

The Cookery, a culinary incubator and event space for all things food, is unveiling it’s first of countless pop-up restaurant concepts. Serving as the only revolving pop-up restaurant venue in the Southeast, The Cookery invites talented chefs throughout the nation that are thirsting to create a legendary experience for food enthusiasts. The restaurants will usually have short runs, lasting only for 3-4 days, leaving a great taste in your mouth and a craving for more! Each restaurant will be unique in flavor, decor, and inspiration, serving as a playground for venturesome culinary leaders.
